One of my favourites is Candlenut which I found for the first time in Bali last year, whilst attending a cooking lesson there. The Indonesians love them in their curries as they create a beautiful creamy texture and if you are unable to source them, you may use instead macadamia nuts though not as bitter as candlenut. So grind the nuts in a mortar & pestle and cook in a dry pan with your chosen spices. It will thicken up any curry and make it rich and satisfying. You can use it in place of coconut milk and the dish ends up having a mild nutty and almost buttery taste to it.

Another one of my favourites is lemon grass, you can buy it fresh from good Asian supermarkets and the other option is check in the refridgerator. Again you should get out the mortar and pestle and grind away, but the results are well worth it.
